Berry Good Popsicle Recipe - Dairy Free!
Last summer around this time, I went dairy-free. It hasn't been easy and I've definitely veered here and there but I feel much better when I limit my dairy intake. So I'm constantly creating "food projects" for myself to stay inspired to live dairy-free. Not gonna lie...I'm not a frequent cook but I do like eating yummy stuff. The simpler, the faster, THE BETTER!
Check out my homemade recipe for Berry Good Popsicles using the new Unsweetened Silk Almond Coconut Blend milk that literally just arrived in grocery stores. I'm even gonna hook you up with a coupon at the end of this post (for all you coupon-istas out there). Hey, no shame in a coupon.
Here's what you'll need:
- NEW Silk Almond Coconut Blend milk in Unsweetened
- 8 large, fresh strawberries
- 8 frozen strawberries
- 1/2 cup fresh blueberries
- 1/2 banana
- 2 tbsp honey
- Popsicle tray maker (I got a little fancy and bought mine at the Sur La Tabla store)
Pretty healthy ingredients, huh? Here's how to blend them together...
- Use a blender to combine all your ingredients including 2/3 to 1 cup of the Silk Almond Coconut Blend milk in Unsweetened.
- Since I was using my Magic Bullet blender (which caters to small portions), I ended up making 2 batches (one with blueberries and one without). If you like having flavor options, do the same.
- I recommend using your own good judgement on milk to berry ratio. If you want a sweeter and more tart popsicle, throw in more strawberries. I like using half fresh and half frozen strawberries because when I'm tasting the mixture before I pour it, it's cold and it gives me an idea of what it's going to taste like later.
- Don't forget to add that 2 tbsp of honey in each batch. It really makes a difference. Especially if you have a sweet tooth.
Just for ease of clean up, I recommend using a smaller pitcher or pouring container to pour your Berry Good mixture into the popsicle maker. The freezing cups are small and fill up fast. Just take my advice because I made a bit of a mess on my first go of it!
I got a little creative and did a half 'n half mixture, which is actually the ice pop in my main image. Once you've filled all the cups, seal them with their popsicle stick lids and make some room in your freezer.
A few hours later, I removed 2 of the plastic cups from the tray and ran them under warm water for a few seconds to release these babies...
Not bad, right?
This is a "berry" good recipe for anyone who lives an active lifestyle that wants something delicious and refreshing to cool down with before or after a workout. What I love about this recipe is that you can totally taste the coconut flavor from the blended Silk Almondmilk...even with all the berry-ness going on.
