Look at me cooking up a storm! Ha! I thought you might enjoy this video-recipe as it's something I cook at home often. It's a very typical Latin style breakfast. So if you like latin food, you're going to love it! Here goes...
My mom got me into, and I love her for it because it's very healthy. It works nicely as breakfast or brunch on a leisurely Sunday. I make it with Rightrice (original) which you probably know by now is my favorite rice as it’s healthier than your average white rice. Why? Because it’s got veggies in it! Literally, that’s what it’s made from. With 40% less net cards and way less sodium, it’s a healthier choice…and that’s why I’m always cooking with it. You can get a 3-pack here!
The recipe is pretty self explanatory if you watch my video. You're going to need eggs, tortillas (flour or corn..whatever you like), a jalapeño or something equally or less spicy, black beans, salsa, rice, avocados and to top it all off some queso fresco would be fantastic!
I digress here but it needs to be said...thank you, COVID-19, for turning me into more of a food blogger than I ever thought possible (I'm really enjoying it). Really, at least something positive came of you. Ok, back to talking to you folks, sorry 'bout dat.
